I was never a fan of pizza, even before I was diagnosed as a coeliac. However when Sophie told me that there was a restaurant in Cork which served gluten-free pizzas, I was intrigued...
Uncle Pete's use gluten-free bases from a fully gluten-free local bakery* (so no risk of cross-contamination!).

I ordered the Primavera pizza without the feta cheese (basil pesto, spinach, carmelized onions and roasted red peppers). The pesto contains cheese, but it was otherwise vegan (and very delicious!).
The staff were lovely and very accommodating (they even came back to ask me whether I was lactose intolerant, because I asked for my pizza without feta cheese, because there was some cheese in the pesto). I was very impressed and would definitely eat there again when in Cork.

*I assume Delicious Bakery, unless there's more than one gluten-free bakery in Cork.
