My last dinner in Cork was in Ramen, an asian street food restaurant (similar to Neon in Dublin). They offer a wide selection of dishes from many asian countries.
They clearly mark what is or can be made gluten-free, vegetarian, dairy-free etc on their menu (and on their online menu), which is very helpful.

I ordered the Tofu and Vegetables Penang Curry, which was so good that I'm still thinking about it (a month later). I definitely recommend this dish! It was flavourful, warm (spicy, without being uncomfortably so) and the tofu was chewy. It was my favourite meal in Cork, which is saying a lot because I really lucked out with my other meals :-)
The staff were so lovely and friendly! Everyone gets an ice cream cone with their meal to fill with soft serve ice cream afterwards, which is a lovely touch, but not very coeliac-friendly. Or so I thought...
After our meal my friends went to fill their cones with soft serve, whilst I enquired about a gluten-free option. They gave me a little plastic bowl, so I could get ice cream too :-)
I made the most of the bowl by filling it as high as possible. I was very proud of my ice cream pouring skills, as you can see below...
